Adjika is a mixture of salt, garlic, spices with ground hot red pepper. Traditional adjika is not made from tomatoes, but can be used for a homemade, spicy (or not so spicy) red sauce. An excellent adjika is prepared for the winter at home from tomatoes, apples, carrots and sweet pepper. It can also be prepared from cheese and varene.
We prepare a recipe for vareni adjika by mixing the above products.
Products
- Tomatoes – 2.5 kg
- Apple (Antonovka) – 1 kg
- Carrot – 1 kg
- Sweet pepper – 1 kg
- Sugar – 1 cup
- Sunflower oil – 1 cup
- Hot pepper – 3 pieces (depending on taste)
- Chopped garlic – 200 g
- Salt – 2 tablespoons (to taste).
You can add more or less hot pepper to adjika made from all products (depending on taste). The total amount of adjika will be 4.5 liters

How to cook adjika with apples?

- Pass tomatoes, apples, carrots and sweet pepper through a meat grinder with small holes. Chop the garlic and hot pepper separately.
- Mix everything and boil the mass over low heat for 1 hour.
- After boiling, add sugar, sunflower oil, hot pepper, garlic and salt. And do not boil too much, take it as soon as it boils.
